We added lactose to the huge roasted-chocolate batch to make the beer sweet and smooth, and then fermented it with raspberries to finally end up in Buffalo Trace, Four Roses oak bourbon casks. After almost 12 months, we mixed the resulting drink with cocoa beans and a bit of vanilla to give this raspberry cake a bitter, chocolate finish. Collaboration with Lervig.
Delicious aroma with notes of barrel and bourbon. At first a bit sharp, but much better after warming up a bit in the glass. Dark, quite sweet, creamy, but could be still more round. Very good stuff anyway.
